This resulted in a very high standard of quality that the Kalbi has now further refined. All of the key functions of the Crossbones return; such as the deep carry pocket clip; IKBS bearings for smooth action; a liner lock for easy one-handed operation; and a handle that provides the perfect leverage for detail work.While the size and shape of the Crossbones remain largely intact in the Kalbi; the name has changed to differentiate its higher-end position. “Kalbi” comes from a traditional Korean short-rib dish; an homage to Jeff s Korean heritage that maintains a subtle reference to the bone shape of the knife.
